This blog is for our oldest. To all you mom's who have sent your babies out into the world already I commend you! I am struggling. To all you mom's who are no where close to this spot in life - cherish those moments, snuggle a little longer, hug a little tighter, and take the pictures.
My beautiful daughter, you are so smart, talented, and blessed. I know the road has been rocky, there have been deep ravines and amazing mountains. This path is yours and yours alone. We have all been along for the ride, sometimes helping, carrying, dragging, and following you. Now is the time for you to fly. You are out of the nests; you are foraging ahead. You are making your way toward your dreams.
I want you to know that no matter where this path takes you, even as you soar into the air the path to home is always here. We are always here to catch you; we are here to celebrate you. We are here to pick up pieces and help glue them back together if needed.
Now for my fabulous readers (all 2 of you!)
The Fiesta of the Year was had!! Thanks to my amazing mom and 16 year old daughter we were able to host a fabulous party to celebrate the accomplishment of our oldest to fly into her next chapter!
So now for the how...because let's be honest I owe so much to Pinterest and all the fellow bloggers out there! My hubby wins the most creative award with turning the taco pinata into a card box! Because let's be honest most people get quite a bit of money for graduation and the last thing we want is for someone less than honest to pop in and take off with some of it. Pretty obvious if someone tried walking out with the taco!
So with that out of the way it was time to move onto food! Let's be honest who eats at graduation??? Well depending on who you talk to depends on your answer. I talked to mom's who had receptions the weekends prior to graduation and they weren't even going through 40# of meat...so I figured my plan for 150ish tacos was plenty... however, we didn't take into consideration that the hubby is an award winning BBQ Cook off contest!!
So - here is what I did - Fiesta = bright colors + pinatas + sombreros. Decor is easy!
It's the food - basic chicken taco meat + taco ground beef meat. Using Prime Pantry makes grocery shopping SO easy!!!
Plus these are the perfect size and are so light & fluffy! My mama found a Pinterest site to keep them warm even!!! We had some hard shelled tacos, too.
Now for some fabulous fruit salad! I totally stole it! Link is here :) A little bit of honey & cinnamon spiced it up for a fun twist! I made 3 batches plus a little & there were no leftovers...
Let me tell you! This stuff was amazing!!!!
Then the hubby makes fabulous pico de guyo!!! The garden produce is fabulous for this when it's ready, but I shopped Aldi and got fabulous fresh produce to use!
Hubby's recipe is pretty rough - dice tomatoes, onion, and jalapeno's. Mix them together - add cilantro leaves & fresh squeeze some limes...add a couple pinches of salt & you're good to go! It is really where you cater to your own tastes. When he makes it I catch my mouth on fire! When I make it he complains there isn't any spice...
I got adorable cakes from Winterset Hy-Vee & poured candy out of a pinata star.

Sounds like a lot, but really wasn't that much. My baby is amazing and we are so lucky to have so many wonderful people who came to celebrate her too!
